The “Festival of the mixed fried food all’ascolana” is a very popular and characteristic event that celebrates the food and wine products of the Piceno historical tradition, in particular the fritto misto, with its main dish represented by the “olives all’ascolana”.

Ascoli olives owe their name to the city of Ascoli Piceno; they are composed of green olives in brine, stuffed inside with a tender meat-based mixture, represent a gastronomic specialty of the Ascoli area and are one of the most representative dishes of the Piceno.
They are often accompanied by other fried foods such as meats, vegetables (artichokes, zucchini and lamb cutlets) and fried cream.

Benedetto Marini from Ascoli, following his research, dates the birth of the recipe for stuffed Ascoli olives in the year 1800.
At the time, the cooks who served the families of the local nobility, agreeing among themselves, invented the filling of olives to consume the considerable quantities and varieties of meat they had available, due to the increase in the gifts that weighed on the peasants towards their masters.

Cossignano, presents visitors with a valuable and renowned Festival of fried food all’ascolana, which is organized by the ProLoco Cossinea Association, with the support of local professionals.
The festival lasts five days and is enriched by musical and dancing entertainment.
